My Faroe Islands Filet-O-Fish
This is my homemade take on a Filet O Fish, made in the Faroe Islands using fish we had caught fresh from the sea.
This recipe requires a little bit of imagination because we very much made it up as we went along! But essentially, some beautiful fresh cod or haddock is all you need. I used mostly cod for this one because we had plenty of it.

Ingredients
For the fish patties
500g fresh cod or haddock, filleted and deboned
2 medium potatoes
1 tbsp butter
A drizzle of olive oil
1 shallot, finely chopped (a small red onion or regular onion works too)
1 red or green pepper, finely chopped
2 tbsp capers, roughly chopped
1 tbsp fresh dill, finely chopped (optional)
Salt and black pepper
Around ½ cup breadcrumbs, plus extra for coating
½ cup plain flour
1 to 2 eggs, beaten
Oil for frying
To assemble
Fresh bread rolls
Homemade tartar sauce
Fresh lettuce
Slices of cheese, such as cheddar, Gouda or Mentaos
Method
Start by making sure your fish is properly filleted and remove as many of the bones as you can.
Place the fish in an ovenproof dish with a drizzle of olive oil and a little butter. Roast until the fish is soft, flaky and almost completely cooked through.
While the fish is cooking, peel and boil your potatoes until completely soft. Drain them well and mash until smooth.
Flake the cooked fish into the potatoes, then add the finely chopped shallot, capers, dill if you’re using it, salt, pepper and breadcrumbs. Mash everything together until you have a mixture that holds its shape. You don’t want it completely smooth. Keeping some of the texture of the fish makes it even better.
Shape the mixture into burger sized patties.
Set up three bowls with flour, beaten egg and breadcrumbs. Dip each fish patty first into the flour, then the egg and finally the breadcrumbs, making sure it’s nicely coated all over.
Flash fry the patties in a little hot oil until the breadcrumbs are beautifully golden and crispy on both sides. Transfer them to the oven for another few minutes to make sure they’re hot and cooked all the way through.
Assemble Your Filet O Fish
Grab a really good fresh bread roll and add a generous spoonful of homemade tartar sauce. You can find my tartar sauce recipe here under the fish and chips recipe. If you cannot be bothered to make it then get some from the store or mayo also works really well too!
Add some fresh lettuce, your crispy fish patty and a slice of cheese. Cheddar, Gouda or Emmenthal all work really well.
Close it up and that’s it. A homemade Filet O Fish made with fresh Faroese fish, and easily one of my favourite things we cooked on the trip. Enjoy!
